Usually served with spicy pudina or mint chutney, kebabs are available in the form of minced patties or skewers.
Traditionally made in the tandoor or tawa, kebabs originated in Middle Eastern cuisines.

Dahi ke kebab
A popular vegetarian snack in North India, these kebabs are crisp on the outside and soft on the inside.
Mix hung yogurt, dry-roasted besan, finely chopped coriander leaves, green chilies, onions, powdered and roasted cumin seeds, and salt.
Refrigerate this mixture for one hour. Shape it into round patties and pan-fry them until golden brown.
Serve hot with green chutney.

Mince together grated beetroot, tofu, amchoor, garlic, roasted and crushed anardana, rock salt, and chaat masala.
Make small round patties, insert chopped cashews as a filling, and shape them into round kebabs.
Coat the kebabs in crushed oats powder. Shallow fry them and serve hot with green chutney.
Hara bhara kebab
Roast cumin and coriander seeds in a pan.
Add water, salt, sugar, peas, and spinach, and saute well. Drain the water.
Grind the mix along with ginger, green chilies, cumin seeds, roasted coriander, coriander leaves, garlic, and parsley.
Mix boiled potatoes, the paste, bread crumbs, chaat masala, salt, lemon, and cornflour and make round balls.

Almond and amaranth kebab
These almond and amaranth kebabs are healthy and are perfect to serve as appetizers.
Roast whole almonds for four minutes and cut them roughly once cool.
Combine almond flour, amaranth flour, chopped onions, mashed potatoes, chopped ginger, green chilies, garam masala powder, salt, and coriander leaves.
Pan-fry the kebabs in hot oil until golden and crisp. Serve hot with chutney.
Sabudana seekh kebab
These kebabs are soft and juicy and perfect to serve at an evening party.
Mix boiled and mashed potatoes and soaked sabudana.
Add yogurt, roasted groundnut powder, chopped coriander leaves, sugar, salt, finely chopped red chilies, and rajgira flour, and knead well into a soft dough.
Add the dough onto skewers, brush with ghee, and grill well. Serve hot with green chutney.
